Addition

One boy,

One girl,

Two hearts beating wildly,
To put it mildly,
It was love at first sight.

He smiled,

She smiled,

And they knew right away,
This was the day they'd been waiting for all their lives.

For a moment the whole world revolved
Around one boy and one girl.

Curtis and Shae are engaged!

Fajita Nachos

When we lived in Arizona, we loved to get Fajita Nachos at Abuelo's Restaurant.  YUMMY!!!
They are pretty easy to recreate at home.

Tostada Shells
Cooked, Shredded meat (beef, chicken or pork)
Diced Onion
Diced Green Chilies
Shredded Cheese
Sour Cream
Optional Toppings: Sliced Jalapenos, Guacamole, Olives, Pica de Gallo

Coat baking sheet with cooking spray.  Arrange tostada shells on baking sheet and top with meat, onions, green chilies and shredded cheese.
Bake @350 degrees for 10 minutes or until cheese is melted and toppings are heated through.
Serve topped with sour cream and other toppings of your choice.

My notes: These are really, really good made with leftover Kalua Pork
Or with this Pulled Pork.  (My family didn't care for the pulled pork, but it was indescribably good on the nachos!)
These are super easy to throw together if you have leftover meat from another meal.

We had a little Kalua Pork left over from a recent family event.  Curtis received the
It was a great day!!!

Give a Man a Fish...

"Give a man a fish; you have fed him for today.  Teach a man to fish; and you have fed him for a lifetime."

Or, you can be like our family.  We are strictly a "catch and release" gig.
But, there has been a lot of fishing going on around here!

Everyone is getting in on the action.  Including Emily!  The fish at the top of the page was one she caught.
Second largest of the season, so far.
The largest fish of the season was reeled in by this guy: (Shane)
No picture because:
1. I wasn't there and
B. It snapped the line and got away before Rick could grab it! It was close to 2 feet long!

Shane LOVES to fish.  He is the only one willing to get up in the wee hours of the morning to go fishing with his dad.  He told us the other day he has caught a "decade of fish".  That's 10 fish, if you weren't certain.

Curtis also likes to fish...but does not like to have his picture taken.

Are you kidding me?  He still has service?  So much for getting away from work!!!
(He was not happy about it either!)

We've found a great fishing spot, that we love.  Been having a good bit of success on pink power bait!
Shane likes to get his line in the water & then passes the time playing "Prince of Persia" on the rocks.

Beautiful sunset over the lake.  This particular day, we fished until there was no daylight left.

Gone Too Soon

Surrounded by her family, and with Gary by her side, our beloved Amy passed away this morning, July 3rd,  at 2:35 AM.
She has fought a hard and valiant fight.  She is much loved and will be missed.
As we sat together in the early morning hours, tears of sorrow soon became tears and laughter as we shared warm, loving and fun memories of Amy.  She has left behind a wonderful legacy of love and service.
This silly little saying came to mind this morning, and I think it truly captures the essence of how Amy lived her life. She embraced life with joy and passion!

"Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways, body thoroughly used up, totally worn out and screaming "WOO HOO, What a Ride!"

Love you Amy!  Save a spot for me!!!  (I'll bring the Eclair Cake and the Diet Coke)
