I used to make this soup all the time when my kids were younger, but I hadn't made it for a while.
It's easy and yummy!
I had forgotten how much we like it!
It is very similar to Connie's Vegetable Soup.
The recipe is from one of my favorite cookbooks:
"Managing Your Meals" by Winnifred Jardine
Hamburger Vegetable Soup
1 pound lean ground beef
2 onions, chopped
4 cups water
1 can (28 ounces) tomatoes (I like petite diced) or 1 qrt. bottled tomatoes
5 medium potatoes, pared & cubed
3 large carrots, peeled & sliced or cubed
1 tsp. salt
1 bay leaf
2 cups Monterey Jack cheese, cubed
In a large pan, brown ground beef with onion.
Add remaining ingredients, except the cheese.
Simmer, partially covered, until vegetables are tender, about 1 hour.
Just before serving, garnish with cheese cubes.
Makes 8 servings.

I grew up on a similar recipe and it was always a hit. (Mom always added frozen peas just before it was done.) :o)
