Hamburger Soup

I used to make this soup all the time when my kids were younger, but I  hadn't made it for a while.
It's easy and yummy!
I had forgotten how much we like it!
It is very similar to Connie's Vegetable Soup.
The recipe is from one of my favorite cookbooks:
"Managing Your Meals" by Winnifred Jardine

Hamburger Vegetable  Soup
1 pound lean ground beef
2 onions, chopped
4 cups water
1 can (28 ounces) tomatoes (I like petite diced) or 1 qrt. bottled tomatoes
5 medium potatoes, pared & cubed
3 large carrots, peeled & sliced or cubed
1 tsp. salt
1 bay leaf
2 cups Monterey Jack cheese, cubed

In a large pan, brown ground beef with onion.
Add remaining ingredients, except the cheese.
Simmer, partially covered, until vegetables are tender, about 1 hour.
Just before serving, garnish with cheese cubes.
Makes 8 servings.

Hope you enjoy!

  1. Adding it to my growing list of soups to make. I love the cold weather, because then I can live off soup.

  2. I have a version of this but I reallly really like that yours had cubed Monterey Jack in it - Yummy!!!

Hey hOpe you are having a Great day!!

  3. sounds like the perfect idea on this freezing cold day.
I love soups in the winter. they really hit the spot don't they.

  4. I grew up on a similar recipe and it was always a hit. (Mom always added frozen peas just before it was done.) :o)

  5. Those cheese cubes really add to that delicious looking soup!
    Hope you're doing well.

  6. I agree, the cheese tops it off. I have a recipe like this but I'm going to add some cheese next time.

  7. I don't think I have ever had this soup. Looks yummy!
I need to Pin it! :)

  8. Yum! Nothing like a good bowl of soup in this weather too!
    Thanks for sharing.

  9. Looks delish!

I'll have to try it out. My family, especially my husband, love all sorts of beefy-vegetably soups!
