Texas Caviar Salsa

This is some yummy stuff!
I got this recipe from my friend, Sharla. Some of my favorite recipes are from her.


Texas Caviar Salsa

1 can black eyed peas, drained
1 can Rotel tomatoes-not drained
(mild or spicy, depending on your preference)
1 bell pepper, chopped
red onion, chopped (amount at cook's discretion)
1 pkg. frozen petite corn, thawed
Cilantro, chopped
1 small bottle Italian salad dressing
Toss all ingredients together. Chill. Serve with tortilla chips.

*My notes:
I use the regular Rotel, not the spicy. You can also add some heat with a couple of shakes of Tabasco/Hot sauce.
I only use about 1/2 -2/3 a pkg of corn.
We are not cilantro lovers (sorry, Connie) so I only use a couple of small handfuls of cilantro. That's the great thing about this recipe...adjust it to your family's taste!

  4. This looks so good. I use Rotel in many recipes - why does it just add that special something? I don't know but can't wait to try it in this recipe as well!

  6. Darn....I was shopping yesterday and thought to myself, I should get some cilantro!!! YES...I should have! I'm stopping by the store tomorrow on my way home from work. I AM MAKING THIS!!!!

  8. I've heard of this before, but never had it. It sure looks good!

    When I first went down to Ecuador many years ago, everyone used cilantro as their only herb or spice and I was sooooo tired of it. I wouldn't touch it for years! But I'm over that now and I really like it. But my kids don't care for it much. :)
